Cheese might be the archetypal Swiss food, but for me it is really the potato. After all, Switzerland has lots of competitors in the cheese market (and I don't really like Swiss cheese as much as its English rivals or some of the French). But roesti lives in a world apart, and someone has recognized the potato's importance to the Swiss by devoting a whole site to the potato and launched an intensive television campaign on the Andean vegetable. The website offers a section of 172 recipes (including 14 for roesti provided you spell it rösti and understand French or German), and two CDs at its online shop.
